If you’ve never tried anchovy noodles, prepare for a great treat. If it sounds intimidating, don’t worry. Not only is this dish incredibly easy, but the flavors aren’t overpowering. Anchovies and sliced garlic are gently warmed in extra virgin olive oil until the fillets essentially dissolve, creating a rich, savory sauce.

7 nests of konnyaku noodles
2 pieces anchovy
1 clove garlic
Salt ¼ tsp
A pinch of chili flakes (optional)
Olive oil 1 tsp


1.Prepare the konnyaku noodles. Bring water to a boil in a pot, put in the dried konnyaku noodles. Then remove from the heat, let the noodles rest for 7 minutes. Drain the konnyaku noodles in a colander and rinse them under the tap with hot water (the rising in necessary to remove the tapioca syrup coating).

2. Chop anchovies and garlic.

3. Put dry konnyaku noodles in frying pan and cook on medium heat until a little bit crisp.

4. Remove konnyaku noodles from the pan.

5.Put olive oil in the pan on low heat. Then toss in garlic, anchovies and chili flakes and cook until fragrant. Then put back the konnyaku noodles, mix and add salt and pepper.

6.Serve in a dish and enjoy!
