Cold soba noodles are perfect for hot summer!

Zaru Soba is a chilled noodle dish made from buckwheat flour and served with soy sauce based dipping sauce called tsuyu. The word zaru means “a strainer” in Japanese and the name of the dish was derived from the way the noodles are served over a bamboo strainer during Edo Period.

It is light and refreshing. Zaru Soba will be your summer go-to staple. 10-minute is all your need to prepare this delicious noodle dish.

Ingredients (serves 2 people)

200g Organic soba

Higashimaru Men Soup

Optional: wasabi, chopped green onion, nori seaweed strings

Method


  1. Bring a large pot of water to a boil. Add the dried soba noodles to the boiling water, gently stirring noodles with chopsticks. Cook for 5 to 6 minutes, or until just tender.


  2. Put the noodles in a colander and rinse under cold running water to remove the starch. Strain the noodles.


  3. Dilute me soup with 1:3 ratio (1 part soup, 3 parts water).


  4. Dip soba noodles into men soup and enjoy!


  5. Add chopped green onion and nori seaweed.


  6. Put some wasabi into men soup for stronger taste.
