Located in Kochi Prefecture of Japan, Umaji Village is a small village with a population of approximately 900 people. It is a village rich in nature, surrounded by 96% forest, and is a village well-know for it's delicious cuisine made with yuzu as the village has a rich history in the yuzu production.
"Ponzu Sauce" made with yuzu from Umaji village in Kochi prefecture is a versatile seasoning. It is made with yuzu juice, bonito dashi, and kelp dashi and soy sauce. The method to perfectly balance the "aroma," "acidity," and "bitterness" of yuzu with the "umami" of soy sauce and dashi. It is very good for hot pot, salad, and grilled meat etc. However, it is versatile enough to use regardless of any kind of dish.
