Baby Clam Pasta with Soy Milk and Avocado
With their ideal tender texture these baby canned clams are perfect for all your favourite seafood recipes. Not only are clams tender, delicious and versatile, they are also an excellent source of iron and a good source of protein. They are low in saturated fats and free of trans fats, canned baby clams are an excellent choice for healthy eating. Combine baby clams with konnyaku noodles, avocado and soy milk for even a healthier meal!
Ingredients (serves 2 people)
- 6 nests of konnyaku noodles
- Two cans of baby clam
- 1 avocado
- For sauce: 100 ml of soymilk, juice from the can, 1 tbsp. olive oil, and 1/2 tbsp salt
- 150 ml soymilk
- 20 gr butter
- Salt and pepper
Preparation
1. Prepare the konnyaku noodles. Bring water to a boil in a pot, put in the dried konnyaku noodles. Then remove from the heat, let the noodles rest for 7 minutes. Drain the konnyaku noodles in a colander and rinse them under the tap with hot water (the rising in necessary to remove the tapioca syrup coating).
2. Slice avocado into 1cm cubes. Separate the juice from the can and put it aside for sauce.
3. Mix the sauce ingredients.
4. Put the sauce in a small fry pan and heat it on medium heat until it boils. Then put the konnyaku noodles and cook for another 2-3 minutes on low heat with lid on.
5. Put soy milk and butter into the pan, and cook for 2 minutes while mixing until the liquid is reduced to half.
6. Put avocado and clams, and mix for 1-2 minutes, add salt and pepper to adjust the flavor to your liking, then remove for the heat.
7. Serve with a twist of black pepper. Enjoy!
