HARUSAME CHINESE STYLE SALAD
A refreshingly tasty salad with low calorie konnyaku noodles! Only 100 kcal per portion! This sweet and sour taste is simple but addictive at the same time and is perfect when you want to have a quick small meal, or as an appetizer.INGREDIENTS (serves 2 people)
6 nests of dried konnyaku noodles
1 egg
50g of carrot, cut into long thin strips
50g of cucumber, cut into long thin strips
20g of loin ham, cut into long thin strips
A pinch of toasted sesame seeds
SEASONING
1 tbsp soy sauce
2 tsp rice vinegar
1 tsp sugar
1 tsp sesame oil
A pinch of dried Chili flakes
METHOD
1. Bring water to a boil in a pot, put in the dried konnyaku noodles. Then remove from the heat, let the noodles rest for 7 minutes. Drain the konnyaku noodles in a colander and rinse them under the tap with hot water (this rising in necessary to remove the tapioca syrup coating).
2. Crack open and put the egg in a small bowl and mix well. Put it into a small pan and move the pan gently to spread the egg. When it is cooked, turn over the egg and remove from the heat.
3. Put the egg onto a cutting board and cut it into long thin strips
4. Put all seasoning, dried konnyaku noodles, cucumber, carrot and egg strips in a bowl and mix well
5. Serve with sprinkle of toasted sesame seeds.
