Miso-marinated Black Cod



Ingredients: 4 Black Cod Fillets / 160g White Miso Paste / 160ml Plain Yoghurt  / 4 tbsp Cooking Sake / A dash of Soy Sauce / 3 tbsp Sugar

1) To make a marinade, mix the miso paste, yoghurt, cooking sake, sugar and soy sauce
in a plastic container.

2) Pat the black cod fillets dry with paper towels and put them into the plastic container
with the marinate. Cover the lid and leave to steep in the refrigerator overnight or for 24 hours.

3) Lightly wipe off with fingers any excess miso marinate clinging to the fish fillets
but don’t rinse it off.

4) Roast the marinated fish fillets in a pan over low heat.
If using an oven, preheat at 200 degrees Celcius and bake the fish fillets for 10-15mins.

5) Add a few extra drops of the marinate on the plate and serve hot.

* You can substitute black cod for sea bass, salmon or any kind of flaky fish fillets.
