Our special somen flour is mixed with Aso subsoil water and kneaded with great care.
The dough is matured (30 minutes for the dough and 1 hour for the noodle belt), and the noodles are slowly dried for approximately 10 hours in a long maturation drying process.
No. 28 round, boiled for 2 to 2.5 minutes, smooth and crispy texture.
National Dried Noodle Cooperative Association guidelines (voluntary standards for all dried noodles): ‘Items that can be labelled as matured’ are those that have been matured for 30 minutes or more in the dough or noodle strip.

当社専用そうめん用粉に阿蘇の伏流水を加え丹念に捏ね上げました。
熟成(生地30分、麺帯熟成1時間)と圧延に時間を掛けて長時間熟成乾燥で約10時間掛けてゆっくり乾燥致しました。
28番丸 2分~2分半茹でなめらかな食感で歯切れの良い食感が特徴です。
全国乾麺協同組合のガイドライン(全乾麺の自主基準)「熟成と表示が可能なもの」は生地又はめん帯で30分以上熟成されたもの。
