Kiriboshi radishi is made by slicing Japanese raddish into small piceses and drying them in the sun. By drying under the sun increases the sweetness and concentrates their umami and nutritional value.
They are also richer in dietry fibre fibre and contain more calcium, iron and B vitamins.
Carrots, Shiitake mushrooms and fried todu are added, seasoned with dashi and soy sauce. Perfect as a side dish as a snack for drinks. Loved and cooked in Toyota City, Japan for 50 years.
They are a ready-to-eat side dish commonly included in bento boxes and served as a side dish.
