Iyemon Hojicha with Roasted Rice (100g)
A traditional Japanese roasted green tea by Ujinotsuyu, part of Kyoto’s renowned Fukujuen tea house. Carefully roasted under controlled temperatures, this hojicha develops a rich, comforting aroma with a smooth, mellow flavour and gentle roasted sweetness. The addition of fragrant roasted rice enhances its warm, nutty character, creating a beautifully balanced tea with a pleasantly nostalgic taste. Naturally refreshing and easy to enjoy, it offers a satisfying flavour whether brewed hot or cold.
How to use
Hot (teapot): Use hot water at about 90°C, which is boiled water left to cool slightly, or straight from a hot water pot. For 2 servings, use about 4-5 g of tea (a little less than 1 tablespoon) and about 200 ml of water. Steep for about 20 seconds, then pour without waiting. When filling two cups, pour a little into one, then a little into the other, and keep alternating so the strength is even. Drain the last drop from the teapot so the second infusion doesn’t turn bitter.
Second infusion: Pour in hotter water than the first time and serve right away, without waiting. With most of the matcha gone after the first cup, the sencha’s refreshing astringency and fresh leaf flavor come through.

Cold brew: Cold water keeps the catechins (the compounds that cause bitterness) down and brings out the sweetness and umami. Add 10-15 g of tea (about 2 tablespoons) to 1 litre of cold water in a pitcher and refrigerate for 20-30 minutes. Shake or stir just before serving to redistribute the matcha that settles at the bottom.
