Kanedai's miso uses 100% domestic ingredients. It is a non-heated raw miso that does not use any alcohol or preservatives for preservation. With a higher ratio of koji, it has a refreshing taste that has been matured, offering sweetness, umami, and a rich aroma. The yeast is alive, allowing for further maturation and flavor changes even after it arrives at your hands.
