Green kabosu bears many fruits in the summer and is ready for harvest, but in production areas where the population is ageing and labour shortages are occurring, the harvest is sometimes not made in time or the kabosu remains unharvested in the field.

With these social issues in mind, ``Kabosu Kabosu'' is grown on a tree by exposing it to the summer sun until it fully ripens, and ripening it until the skin turns pale yellow in the fall.

Ripe kabosu differs from green kabosu in that it has a balanced taste of sourness and sweetness.

夏に多くの実をつけ収穫時期を迎える緑色のかぼすですが、高齢化や人手不足が進む産地では、収穫時期に間に合わなかったり、収穫されないまま圃場に残ってしまうことも時々あります。

そういった社会的課題を背景に、木の上で完熟するまで夏の太陽に当て、秋に果皮が薄黄色になるまで熟成したのが「完熟かぼす」です。

完熟かぼすは緑色のかぼすとは異なり、酸味と甘みが整った味わいが特徴です。
